Rhubarb Cake

My sister cleaned Mrs. Remmel’s home in exchange for this recipe.

1/2 cup butter

1 1/2 cup sugar

2 eggs

3 cups flour

1 cup milk

1 tsp. vanilla

pinch salt

Mix ingredients as for cake batter.  This should be very stiff.  Smooth into buttered 9 x 13 baking dish.


4 cups rhubarb cut into 1/2″ pieces

1/2 cup sugar

3 oz. package of strawberry gelatin

Mix together and place over batter.


1/4 cup flour

1/2 cup sugar

3 TBSP butter

Crumble together and sprinkle over rhubarb mixture.

Bake at 375 for 35 to 40 minutes.

    Actually I shelled lima beans for that recipe – lots and lots of lima beans.
